We have had a fine crop of beetroot this year and already enjoyed it with many meals. Now the last few plants have been pulled from the ground as you can see below. I reckon that is about five family meals with Joshua loving the stuff but Jaya refusing even when we tell her it is a pink carrot. She likes carrots and, like all little girls these days, all things pink.
So a fifth of what you see below has been first washed and now sits in the fridge for the weekend. The rest, once dried went in the sand in a box in my food shed/office.
We did not have a freezer at Butterwell Farm when I was a child so my mother preserved everything either in sand or in jars in the larder. Root vegetables went in sand boxes. It seems a bit old fashioned but it works and, using no electricity, is very green.
